In case you’re not aware there is a accessibility setting hidden deep inside the Settings app that lets you do exactly that.
Here’s how to enable it:
* Launch the Settings app from your iPhone’s Home screen.
* Navigate to General > Accessibility. Scroll down, and tap on Incoming calls.

iPhone’s speaker or your headset. You have to go through the same
process to disable it, which is the downside of enabling this option. It
would have been nice to have a quick settings toggle in Control Center
to enable or disable it
